Description

A delightful fall-inspired breakfast featuring brioche stuffed with pumpkin and warming spices, perfect for family gatherings.

Ingredients

Scale
  • 1 loaf of brioche bread (or any good-quality bread)
  • 1 cup of pumpkin puree (canned or fresh)
  • 4 large eggs
  • 1 cup of milk (dairy or non-dairy alternatives)
  • 2 teaspoons of vanilla extract
  • 1 tablespoon of cinnamon
  • A pinch of nutmeg
  • A pinch of salt
  • Maple syrup for serving
  • Powdered sugar for dusting

Instructions

  1. Prepare the pumpkin filling: In a mixing bowl, combine the pumpkin puree, cinnamon, nutmeg, and a pinch of salt.
  2. Make the custard mixture: In another bowl, whisk together eggs, milk, and vanilla extract until well blended.
  3. Assemble the toast: Take a thick slice of brioche and slice it through the center to create a pocket, then fill it with the pumpkin mixture.
  4. Dunk into custard: Carefully dip the stuffed bread into the custard mixture, ensuring all sides are well coated.
  5. Cook to perfection: In a large skillet over medium heat, add a tablespoon of butter. Once melted and bubbling, place the stuffed bread slices flat in the skillet.
  6. Serve: Stack them high on a plate, drizzle with maple syrup, and sprinkle with powdered sugar.

Notes

For a vegan version, substitute eggs with flaxseed meal mixed with water. Use almond or oat milk instead of dairy milk.
