Description
A comforting Italian soup made with creamy cannellini beans, fresh herbs, and garlic, perfect for chilly evenings.
Ingredients
Scale
- 1 can of cannellini beans, drained
- 2 cups of spinach or kale
- 4 cups of vegetable broth
- 3 cloves of garlic, minced
- 1 onion, finely chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prep your vegetables: Start by finely chopping your onions and garlic. Rinse and drain your canned beans.
- Sauté aromatics: In a large soup pot, heat a tablespoon of olive oil over medium heat. Add the onions and sauté for about 5 minutes until they turn translucent. Then, add in the minced garlic, stirring constantly to avoid burning.
- Add the greens: Toss in your choice of greens. Cook until wilted, typically just a few minutes.
- Spice it up: Sprinkle in the herbs—fresh rosemary and thyme. The lovely aroma will start to fill your kitchen at this point!
- Introduce the beans: Add the cannellini beans to the pot, followed by vegetable broth. Bring the mixture up to a gentle simmer.
- Blend and cook: For that signature velvety texture, you can partially blend the soup using an immersion blender or by transferring a portion to a countertop blender and then returning it back. If you prefer the beans whole, blend only half. Simmer for another 10-15 minutes, allowing flavors to meld.
- Finishing touch: A final drizzle of olive oil and a sprinkle of freshly cracked pepper right before serving brings this soup to life.
Notes
Serve hot with crusty bread or a light salad. The soup freezes well for up to 3 months.
